When filling out forms and choosing a company name the signatory in Digi Sign is the company name and not the representative. This is not compliant with our closing attorneys. Can the default be made the signatory and not the company name?

We are having the same trouble.
The client is a company however we need the signature on documents to be the member's name. Digisign doesn't allow this to be changed - even though you enter the member's name. When it comes to signing it uses the company name and doesn't allow you to change it.
There is a workaround which is to have the client change their signature name - but this is not an acceptable solution.
