It would be nice to be able to add notes to a task. For example, the task is "Schedule Photography" and the note could include photographer name, phone number, even dates and times that work best for the client.

Yes - I was going to suggest the same thing. I like using the task template for my deals, but I want the ability to add notes for each task - and have those notes visible under the Task Name. Like:
- Inspection Contingency Due
NOTE: Submitted repair request to listing agent on 6/16.
