To clarify, are you trying to get an attached document onto the Checklist, or a copy of the body/message of the email onto the Checklist? Attached documents will populate in the Documents tab which you can then assign to the Checklist, but the body of the email will not automatically transfer. So if the latter is the case, I suggest downloading a PDF copy of the email and then attaching (you can download a PDF version from your email client or by pressing Control + P or Command + PDF and then selecting "Save as PDF"). I'll also document this feature request for the team to review.
