Digisign Sent Tab

After sending a Document with Write Text and signature/initial required, I was unable to view it on the Sent tab at a later time to confirm that I had sent with requested updates. When I viewed it, my updates did not show. I went in to edit the document and there I could see my edits, but not on the view pane of the Sent tab. 

You should be able to see your edited version of what you sent, not the original unedited version. Just a suggestion. Maybe this is just a glitch.

When you open the preview window for a sent envelope, it shows you what that document looks like at that moment. You are correct, it doesn't show any of the fields that you added to it, because they haven't been filled out by your signers. In order to see all the blocks or fields you have added to the envelope, you would need to edit it. As each signer completes the envelope, the preview will show the latest version of the document, which would include their signatures and any other data they have added.
