Would really like to see an "edit" option in the envelope screen to allow the renaming of each envelope to more easily identify them.

I've documented your request and we'll also monitor this post for upvotes and comments. As a workaround, you can change the name of your envelope when initially sending out for signature. After clicking "Prepare Signature" in Forms, this window will appear. Here, you can input your desired envelope name.
